These Healthy Raw Cacao Goji Berry Energy Bars are a nutrient-dense snack that combines the rich flavors of raw cacao with the superfood benefits of goji berries and jungle peanut butter. Perfect for a quick energy boost or a post-workout treat, these bars are easy to make and packed with health benefits!

Ingredients

  • 1/2 cup ceremonial cacao paste (pasta pura de cacao) (about 80g)
  • 1/4 cup raw cacao powder (about 25g)
  • 1/4 cup raw cacao butter (about 28g)
  • 1/2 cup jungle peanut butter (or any nut/seed butter of your choice)
  • 1/2 cup goji berries (approximately 60g, chopped if large)
  • 1/4 cup raw honey (about 85g, adjust to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1/2 cup rolled oats or jungle peanuts for added texture

Instructions

  1. Melt the Cacao Butter and Cacao Paste:
    • In a double boiler or a heatproof bowl over simmering water, melt the raw cacao butter until fully liquid. Stir occasionally to ensure even melting. Remove from heat once melted.
  2. Mix Base Ingredients:
    • In a large mixing bowl, combine the raw cacao paste, raw cacao powder, jungle peanut butter, melted cacao butter, raw honey, and vanilla extract. Mix well until you achieve a smooth and creamy consistency.
  3. Add Goji Berries:
    • Fold in the goji berries and a pinch of salt into the mixture. If you're using rolled oats or nuts for added texture, mix them in at this stage as well.
  4. Prepare the Pan:
    • Line an 8x8 inch (20x20 cm) baking dish or pan with parchment paper, allowing some overhang for easy removal later.
  5. Spread the Mixture:
    • Pour the mixture into the prepared pan and spread it evenly using a spatula or your hands. Press down firmly to ensure it holds together.
  6. Chill to Set:
    • Place the pan in the refrigerator for about 1-2 hours, or until the mixture is firm enough to cut into bars.
  7. Cut and Store:
    • Once set, remove the mixture from the pan using the parchment overhang and cut it into bars or squares.
    • Store the energy bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.
