This cashew cheese is great as a dip, to spread on crackers, to use as filling in a wrap.
4 cups of cashews or 3 1/2 cups of cashew flour
1/2 fresh red bell pepper
1 Tbls. Rosemary ground
1/2 cup lemon juice
1 cup almond pulp
2 cloves of garlic
1/2 tsp of salt
add water until smooth
Note: You can substitute one cup of the cashews with 1 cup of sunflower seeds to reduce cost and add more variety to the taste.
1. Place the garlic in the food processor 1st. Run the food processor until the garlic is chopped up.
2. Add all the rest of the ingredients into the food processor except the water.
3. Run the food processor until the nuts are chopped. Add a little water and process, keep adding the water until the cashew cheese smooth.
